 Olive oil

Salt

Pepper

Crushed Garlic

Nutritional Yeast

Fennel

Goat Cheese

DIRECTIONS

Recipe #1

Using Patty Pan Squash (yes that is this flat looking Squash that most folks have never seen), Squash, Cauliflower, and Broccoli. Preheat oven to 425 degrees. Chop everything as small as you like. Place in a large bowl: add olive oil, salt, pepper, crushed garlic to coat all vegetables. Lay everything on a baking sheet. Top with nutritional yeast (this adds vitamins, protein and a cheesy flavor without the dairy). Bake for a total of about 30 minutes or until tender, turning vegetables every 10 minutes. Use this as a side dish or mix with a salad.

Using Kale, Beets, Kohlrabi, Fennel, Goat Cheese. Preheat oven to 425 degrees. Chop everything except the goat cheese as small as you like. Place in a large bowl: add olive oil, salt, pepper, crushed garlic to coat all vegetables. Lay everything on a baking sheet. Bake for a total of about 30 minutes or until tender, turning the vegetables every 10 minutes. Place the vegetables on a plate and top with goat cheese.
