INGREDIENTS

1 pound ground beef

2 eggs

1 tablespoon Worcestershire sauce

1/2 onion finely chopped

1/3 cup pork rinds crushed

1 teaspoon salt

1/4 teaspoon pepper

2 tablespoon garlic minced

1 tablespoon parsley chopped

2 teaspoon Italian Seasoning

1/4 cup Parmesan cheese grated

1 cup beef broth or water

low carb ketchup optional

DIRECTIONS

Mix ground beef, eggs, worcestershire sauce, onion, pork rinds, salt, pepper, garlic, parsley, Italian seasoning, and parmesan cheese together in a large bowl.

Using a large piece of aluminum foil, create a loaf shape to hold the meatloaf.

Shape your hamburger mixture into a meatloaf shape and set on the foil wrap.

Place beef broth in Instant Pot.

Grab the trivet and place your foil wrap holding your meatloaf onto the trivet.

Carefully set inside Instant Pot.

Ensure SEALING is set.

PRESSURE COOK on HIGH for 25 minutes. Then do a quick pressure release.

Once Meatloaf has cooked, brush with low carb ketchup and place on a baking sheet.

Broil in the oven for 3-5 minutes until caramelized.

NOTES

Loaf can be baked in the oven if desired. It will take about an hour at 350°F to fully cook. If topping with optional ketchup, add it during the last 15 to 20 minutes of baking.

    Hi! I use ground turkey for everything! Spaghetti, tacos, etc. Any instructions on making the meatloaf in the oven? I don’t have an instant pot…mine always comes out too dry!
